Sloppy Joe Cornbread Bake is a delicious and hearty dish that combines the flavors of classic sloppy joes with the comforting texture of cornbread. Here’s a basic recipe to get you started:

Ingredients:

For the Sloppy Joe Filling:

  • 1 lb ground beef (you can also use ground turkey or plant-based ground meat)
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard
  • Salt and pepper to taste

For the Cornbread Topping:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 egg

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion, bell pepper, and minced garlic, and cook until the vegetables are softened.
  3. Stir in the tomato sauce, tomato paste, Worcestershire sauce, brown sugar, mustard, salt, and pepper. Simmer the mixture for about 10 minutes, until thickened slightly.
  4. While the sloppy joe filling is simmering, prepare the cornbread topping. In a mixing bowl, combine the cornmeal, flour, baking powder, and salt.
  5. In another bowl, whisk together the milk, melted butter, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Pour the sloppy joe filling into the prepared baking dish, spreading it out evenly. Then, pour the cornbread batter over the top of the filling, spreading it to cover the filling completely.
  7. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cornbread is golden brown and cooked through.
  8. Allow the Sloppy Joe Cornbread Bake to cool for a few minutes before serving. Enjoy!
