Shrimp-Stuffed Salmon with Lemon Garlic Butter Sauce

🐟 Shrimp-Stuffed Salmon with Lemon Garlic Butter Sauce

🧾 Ingredients

For the Salmon:

  • 4 salmon fillets (6–8 oz each), skin removed

  • Salt and black pepper, to taste

  • 1 tbsp olive oil

  • Lemon slices (for garnish)

For the Shrimp Stuffing:

  • 1/2 lb shrimp, peeled, deveined, and finely chopped

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • 1/4 cup onion, finely chopped

  • 1/4 cup red bell pepper, finely chopped

  • 1/4 cup breadcrumbs (Panko or regular)

  • 2 tbsp Parmesan cheese (optional)

  • 1 tbsp parsley, chopped

  • Salt and pepper, to taste

  • A squeeze of lemon juice

For the Lemon Garlic Butter Sauce:

  • 4 tbsp butter

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • 1 tsp lemon zest

  • 1 tbsp parsley, chopped

  • Salt, to taste


🔪 Instructions

1. Prepare the Shrimp Stuffing:

  1. In a skillet, melt 1 tbsp butter over medium heat.

  2. Add garlic, onion, and bell pepper. Sauté until softened (2–3 mins).

  3. Stir in chopped shrimp and cook until pink (2–3 mins).

  4. Remove from heat. Stir in breadcrumbs, Parmesan (if using), parsley, lemon juice, salt, and pepper. Set aside.

2. Prepare the Salmon:

  1. Preheat oven to 375°F (190°C).

  2. With a sharp knife, cut a slit in the side of each salmon fillet to form a pocket.

  3. Stuff each pocket with the shrimp mixture. Use toothpicks if needed to secure.

  4. Season the outside of the fillets with salt and pepper.

3. Cook the Salmon:

  1. Heat olive oil in an oven-safe skillet over medium-high heat.

  2. Sear the salmon, flesh side down, for 2–3 minutes until golden.

  3. Flip the salmon, then transfer the skillet to the oven and bake for 10–12 minutes until salmon is cooked through.

4. Make the Lemon Garlic Butter Sauce:

  1. In a small saucepan, melt butter over medium heat.

  2. Add garlic and cook for 1–2 minutes.

  3. Stir in lemon juice, zest, parsley, and a pinch of salt.

  4. Cook for 1–2 more minutes, then remove from heat.

5. Serve:

  • Plate the salmon and spoon the lemon garlic butter sauce over each fillet.

  • Garnish with lemon slices and parsley. Serve with rice, asparagus, or a light salad.
