Shrimp Scampi with Roasted Veggies
Ingredients:
For the Roasted Veggies:
- 1 large zucchini, sliced into rounds
- 1 large yellow squash, sliced into rounds
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, chopped
- 2 cups cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
For the Shrimp Scampi:
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- 1 lemon, juiced
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- Cooked pasta or crusty bread, for serving
Instructions:
Roasting the Veggies:
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine zucchini, yellow squash, bell peppers, red onion, and cherry tomatoes.
- Drizzle with olive oil, then season with salt, pepper, oregano, and thyme. Toss to coat evenly.
- Spread the veggies on a baking sheet in a single layer.
- Roast for 20-25 minutes, stirring halfway through, until the veggies are tender and slightly caramelized.
Making the Shrimp Scampi:
- While the veggies are roasting, heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the garlic and red pepper flakes (if using), and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet. Cook for about 2-3 minutes on each side, until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.
- Pour the white wine (or chicken broth) into the skillet, scraping up any browned bits from the bottom. Let it simmer for about 2-3 minutes, reducing slightly.
- Stir in the remaining 2 tablespoons of butter, lemon juice, and chopped parsley. Season with salt and pepper to taste.
- Return the cooked shrimp to the skillet, tossing to coat in the sauce. Cook for another 1-2 minutes until heated through.
Serving:
- Serve the shrimp scampi over cooked pasta or with crusty bread on the side.
- Top with the roasted veggies.
- Garnish with additional parsley and a squeeze of lemon, if desired.
