Shrimp Scampi with Roasted Veggies

Ingredients:

For the Roasted Veggies:

  • 1 large zucchini, sliced into rounds
  • 1 large yellow squash, sliced into rounds
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

For the Shrimp Scampi:

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • 1 lemon, juiced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Cooked pasta or crusty bread, for serving

Instructions:

Roasting the Veggies:

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine zucchini, yellow squash, bell peppers, red onion, and cherry tomatoes.
  3. Drizzle with olive oil, then season with salt, pepper, oregano, and thyme. Toss to coat evenly.
  4. Spread the veggies on a baking sheet in a single layer.
  5. Roast for 20-25 minutes, stirring halfway through, until the veggies are tender and slightly caramelized.

Making the Shrimp Scampi:

  1. While the veggies are roasting, heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the garlic and red pepper flakes (if using), and sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet. Cook for about 2-3 minutes on each side, until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.
  4. Pour the white wine (or chicken broth) into the skillet, scraping up any browned bits from the bottom. Let it simmer for about 2-3 minutes, reducing slightly.
  5. Stir in the remaining 2 tablespoons of butter, lemon juice, and chopped parsley. Season with salt and pepper to taste.
  6. Return the cooked shrimp to the skillet, tossing to coat in the sauce. Cook for another 1-2 minutes until heated through.

Serving:

  1. Serve the shrimp scampi over cooked pasta or with crusty bread on the side.
  2. Top with the roasted veggies.
  3. Garnish with additional parsley and a squeeze of lemon, if desired.
