Shrimp Scampi Pasta Bake sounds delicious! Here’s a simple recipe for a flavorful Shrimp Scampi Pasta Bake:

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined

  • 8 oz (225g) pasta (like penne, rigatoni, or spaghetti)

  • 2 tbsp butter

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1/2 tsp red pepper flakes (optional, for a bit of spice)

  • 1/2 cup dry white wine (or chicken broth if you prefer not to use wine)

  • 1 lemon, zest and juice

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup shredded mozzarella cheese

  • Salt and pepper, to taste

  • 1/4 cup fresh parsley, chopped (for garnish)

  • 1 tbsp breadcrumbs (optional, for a crispy topping)

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Cook the pasta: Cook the pasta according to the package directions, but make sure it’s al dente. Drain and set aside.

  3. Sauté the shrimp: In a large skillet, heat the butter and olive oil over medium heat. Add the shrimp and cook until they turn pink, about 2-3 minutes per side. Remove the shrimp from the pan and set them aside.

  4. Prepare the scampi sauce: In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Add the red pepper flakes (if using), white wine, and lemon juice. Let it simmer for about 2-3 minutes until the sauce reduces slightly.

  5. Make the cream sauce: Stir in the heavy cream and bring it to a simmer. Let it cook for about 3-5 minutes until it thickens slightly. Season with salt, pepper, and lemon zest.

  6. Combine the pasta and shrimp: Add the cooked pasta and shrimp back into the skillet. Toss to coat in the sauce.

  7. Assemble the bake: Transfer the pasta and shrimp mixture into the prepared baking dish. Sprinkle Parmesan and mozzarella cheeses on top, and if you want a crunchy topping, add breadcrumbs over the cheese.

  8. Bake: Place the dish in the oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown.

  9. Garnish and serve: Once out of the oven, sprinkle fresh parsley over the top and serve!
