Creamy Shrimp Casserole
Ingredients:

1 lb shrimp, peeled & deveined

2 cups cooked rice (white or wild)

1 small onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom or celery soup

½ cup sour cream

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

½ tsp paprika
-
¼ tsp cayenne pepper (optional)

Salt & pepper to taste

2 tbsp butter or olive oil

½ cup breadcrumbs (optional topping)
Instructions:

Preheat oven to 350°F (175°C). Grease a 9×13″ casserole dish.

Sauté vegetables: In a skillet over medium heat, melt butter and sauté onion, bell pepper, and garlic until soft (about 5 minutes).

Add shrimp: Stir in shrimp and cook just until they turn pink (2–3 minutes). Remove from heat.

Mix casserole: In a large bowl, combine the cooked rice, shrimp/veggie mix, soup, sour cream, cheddar, Parmesan, paprika, cayenne, salt, and pepper. Stir until well mixed.

Assemble: Spread the mixture evenly in the prepared baking dish. Top with breadcrumbs (if using) and a little extra cheese if desired.
