Shrimp Casserole

Here’s a classic Shrimp Casserole recipe — creamy, cheesy, and full of coastal comfort!


Creamy Shrimp Casserole

Ingredients:

  • 1 lb shrimp, peeled & deveined

  • 2 cups cooked rice (white or wild)

  • 1 small onion, diced

  • 1 bell pepper (red or green), diced

  • 2 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom or celery soup

  • ½ cup sour cream

  • 1 cup shredded cheddar cheese

  • ½ cup grated Parmesan cheese

  • ½ tsp paprika

  • ¼ tsp cayenne pepper (optional)

  • Salt & pepper to taste

  • 2 tbsp butter or olive oil

  • ½ cup breadcrumbs (optional topping)


Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13″ casserole dish.

  2. Sauté vegetables: In a skillet over medium heat, melt butter and sauté onion, bell pepper, and garlic until soft (about 5 minutes).

  3. Add shrimp: Stir in shrimp and cook just until they turn pink (2–3 minutes). Remove from heat.

  4. Mix casserole: In a large bowl, combine the cooked rice, shrimp/veggie mix, soup, sour cream, cheddar, Parmesan, paprika, cayenne, salt, and pepper. Stir until well mixed.

  5. Assemble: Spread the mixture evenly in the prepared baking dish. Top with breadcrumbs (if using) and a little extra cheese if desired.

  6. Bake: Bake for 25–30 minutes, or until hot and bubbly with a golden top.

  7. Serve: Let rest for 5 minutes before serving. Garnish with chopped parsley or green onions.
