Sheet Pan Quesadillas

Sheet Pan Quesadillas are a fun and easy way to make a big batch of quesadillas all at once, perfect for feeding a crowd or meal prepping. Here’s a simple recipe to make them:

Ingredients:

  • 4 large flour tortillas (or more, depending on the size of your sheet pan)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1 lb cooked chicken, beef, or beans (optional for a vegetarian version)
  • 1/2 cup diced bell peppers (red, green, or a mix)
  • 1/2 cup diced onions
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • Olive oil or non-stick spray for greasing
  • Salsa, sour cream, or guacamole for serving (optional)

Instructions:

  1. Preheat your oven: Set your oven to 400°F (200°C).
  2. Prepare your sheet pan: Lightly grease a large sheet pan with olive oil or spray with non-stick spray.
  3. Layer the tortillas: Place two flour tortillas on the sheet pan, overlapping them slightly in the center. The tortillas will act as your base.
  4. Add the fillings:
    • Sprinkle an even layer of cheese over the tortillas.
    • Add your choice of protein (chicken, beef, or beans).
    • Layer in the diced bell peppers, onions, corn, and any other veggies or extras you like.
    • Season everything with garlic powder, cumin, chili powder, salt, and pepper.
  5. Top with more tortillas: Place another set of tortillas over the fillings, again slightly overlapping.
  6. Bake: Pop the sheet pan into the oven and bake for about 10-12 minutes, until the tortillas are golden brown and crispy.
  7. Flip (optional): If you like your quesadillas extra crispy, you can flip them halfway through the baking time. This step is optional but adds extra crunch.
  8. Cut and serve: Once baked, remove the quesadillas from the oven and let them cool slightly before cutting them into triangles. Serve with salsa, sour cream, or guacamole for dipping.

Tips:

  • Customize fillings: You can get creative with the fillings! Try adding black beans, roasted vegetables, or even a bit of spicy jalapeño for heat.
  • Make it vegetarian: Skip the meat and use extra beans, mushrooms, or grilled veggies for a tasty vegetarian option.
