Shamrock Shake Pie

A Shamrock Shake Pie is a fun and festive dessert inspired by the popular Shamrock Shake from McDonald’s, which is mint-flavored and typically enjoyed around St. Patrick’s Day. This pie combines the delicious minty, creamy taste of the shake with the texture of a pie.

Here’s a simple recipe for a Shamrock Shake Pie:

Ingredients:

For the crust:

  • 1 ½ cups of graham cracker crumbs
  • ¼ cup of granulated sugar
  • ½ cup of unsalted butter (melted)

For the filling:

  • 1 cup of heavy whipping cream
  • 8 oz of cream cheese (softened)
  • 1 cup of powdered sugar
  • 1 tsp of vanilla extract
  • 1 tsp of peppermint extract
  • 2 drops of green food coloring (optional)
  • 1 cup of cool whip or whipped topping

For garnish:

  • Whipped cream
  • Mini chocolate chips or sprinkles (optional)
  • Green sugar or mint leaves (optional)

Instructions:

  1. Make the Crust:

    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture into the bottom of a pie dish (9-inch). Use a spoon to press down firmly to form a solid crust.
    • Bake for 10 minutes, then remove and let it cool completely.
  2. Make the Filling:

    • In a large mixing bowl, beat the heavy whipping cream until stiff peaks form. Set it aside.
    • In another bowl, beat together the softened cream cheese, powdered sugar, vanilla extract, peppermint extract, and green food coloring (if using) until smooth.
    • Gently fold in the whipped cream (from the previous step) until well combined. The filling should be fluffy and creamy.
  3. Assemble the Pie:

    • Spread the minty filling evenly over the cooled graham cracker crust.
    • Smooth the top with a spatula or the back of a spoon.
    • Refrigerate for at least 4 hours or overnight to allow the pie to set properly.
  4. Garnish and Serve:

    • Before serving, top with whipped cream, chocolate chips, sprinkles, or any garnish of your choice.
    • Slice and enjoy!
