SEARED SCALLOPS WITH SPICY CAJUN CREAM SAUCE

Seared scallops with spicy Cajun cream sauce sounds delicious! Here’s a recipe to make this flavorful dish:

Ingredients:

For the Scallops:

  • 1 lb fresh sea scallops (about 12 large scallops)
  • 1-2 tablespoons olive oil (or butter)
  • Salt and pepper to taste

For the Cajun Cream Sauce:

  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 3-4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning (or to taste)
  • 1/2 teaspoon smoked paprika (optional, for extra smoky flavor)
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Scallops:

    • Pat the scallops dry with paper towels (this ensures a good sear).
    • Season both sides with salt and pepper.
  2. Cook the Scallops:

    • Heat the olive oil or butter in a large skillet over medium-high heat.
    • Once the skillet is hot, add the scallops, making sure not to overcrowd them (you might need to cook them in batches).
    • Sear the scallops for about 2-3 minutes on each side until golden brown and cooked through. The scallops should easily release from the pan when ready to flip. Remove them from the skillet and set aside.
  3. Make the Cajun Cream Sauce:

    • In the same skillet, reduce the heat to medium and melt the butter.
    • Add the chopped onion and cook until softened, about 2-3 minutes.
    • Add the garlic and sauté for another 1 minute until fragrant.
    • Pour in the heavy cream, Cajun seasoning, smoked paprika, and cayenne pepper (if using). Stir to combine and let the sauce simmer for 3-5 minutes, allowing it to thicken slightly.
    • Add lemon juice, and season with salt and pepper to taste.
    • If the sauce becomes too thick, add a little water or more cream to reach your desired consistency.
  4. Serve:

    • Return the seared scallops to the skillet and toss them in the sauce for a minute to coat them well.
    • Serve the scallops on a plate, spooning the spicy Cajun cream sauce over the top.
    • Garnish with fresh parsley if desired.

Serving Suggestions:

  • Serve the scallops with a side of rice, pasta, or a fresh green salad.
  • You can also pair it with roasted vegetables or a creamy mashed potato.
