Seafood Loaded Potato Pan

A Seafood Loaded Potato Pan is a delicious and hearty dish that combines the rich flavors of seafood with the comforting goodness of baked potatoes. Here’s a simple recipe for you to try:

Ingredients:

  • 4 large russet potatoes, washed and scrubbed
  • 1 lb mixed seafood (shrimp, crab, and/or scallops), peeled and deveined if necessary
  • 1 cup diced bell peppers (red, green, or a mix)
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup chopped fresh parsley
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Lemon wedges for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Prick the potatoes all over with a fork and place them on a baking sheet. Bake in the preheated oven for about 45-60 minutes or until the potatoes are tender when pierced with a fork.
  3. While the potatoes are baking, prepare the seafood mixture. In a large skillet, heat the olive oil over medium heat. Add diced onions and bell peppers and sauté until softened, about 3-5 minutes.
  4. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the mixed seafood to the skillet and cook until they are opaque and cooked through. This usually takes 4-6 minutes, depending on the size of the seafood. Season with salt, pepper, paprika, thyme, oregano, and cayenne pepper (if using).
  6. Once the potatoes are done baking, carefully cut a slit lengthwise across the top of each potato. Fluff the insides with a fork.
  7. Spoon the seafood mixture over the baked potatoes, distributing it evenly among them.
  8. Top each potato with shredded cheese and place them back in the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.
  9. Remove from the oven, sprinkle chopped fresh parsley over the top, and garnish with halved cherry tomatoes.
  10. Serve the seafood loaded potato pans hot, with lemon wedges on the side for a burst of freshness.
