Ingredients:

  • 1 cup uncooked long-grain white rice
  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 2 cups fresh broccoli florets
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed crackers or breadcrumbs (for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice according to package instructions.
  3. In a large bowl, combine the cooked rice, shredded chicken, broccoli florets, and 1 cup of cheddar cheese.
  4. In a separate bowl, mix together the mayonnaise, sour cream, condensed cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  5. Pour the creamy mixture over the rice and chicken mixture. Mix everything together until well coated.
  6. Transfer the mixture to a greased baking dish.
  7. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  8. Sprinkle crushed crackers or breadcrumbs over the cheese layer for added crunch.
  9. Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and the top is golden brown.
  10. Remove from the oven and let it rest for a few minutes before serving.
