Absolutely, Scottish shortbread is a classic and delicious treat. Here’s a delightful variation for you, incorporating a hint of citrus flavor:

Lemon Scottish Shortbread

Ingredients:

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1/2 cup confectioners’ sugar
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat your oven to 325°F (160°C). Line a 9-inch square baking pan with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, confectioners’ sugar, granulated sugar, lemon zest, and vanilla extract until light and fluffy.
  3. Sift the all-purpose flour, cornstarch, and salt into the bowl with the creamed mixture. Stir until a soft dough forms.
  4. Press the dough evenly into the prepared baking pan.
  5. Use a fork to prick the surface of the dough to create a pattern.
  6. Bake the shortbread for 30-35 minutes, or until it’s lightly golden brown.
  7. Remove the pan from the oven and let the shortbread cool in the pan for 10 minutes.
  8. Use the edges of the parchment paper to lift the shortbread out of the pan. Place it on a wire rack to cool completely.
  9. Once cooled, cut the shortbread into bars or wedges.
