Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 1/4 cup finely chopped fresh parsley
  • Salt and pepper to taste
  • Additional toppings (optional): sour cream, salsa, sliced avocado, or fried eggs

Instructions:

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are some lumps.
  4. Fold in the shredded cheddar cheese, chopped green onions, and chopped parsley. Season with salt and pepper to taste.
  5. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  6. Pour 1/4 cup portions of the batter onto the skillet, spreading it slightly with the back of a spoon to form even circles.
  7. Cook until bubbles form on the surface of the pancake and the edges begin to set, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
  8. Remove the savory pancakes from the skillet and repeat with the remaining batter.
  9. Serve the savory pancakes warm with your choice of toppings, such as sour cream, salsa, sliced avocado, or a fried egg.
