A Savory Ground Turkey & Roasted Veggie Rice Bowl is a delicious and nutritious meal that’s easy to make and perfect for meal prep. Here’s a simple recipe for you to try:

Ingredients:

For the Roasted Veggies:

  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

For the Ground Turkey:

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon soy sauce or tamari (optional)

For the Rice:

  • 1 cup cooked rice (white, brown, or jasmine rice)

Garnish (optional):

  • Fresh cilantro or parsley, chopped
  • A squeeze of lime juice
  • Crumbled feta cheese or avocado (optional)

Instructions:

  1. Roast the Veggies:

    • Preheat your oven to 400°F (200°C).
    • In a bowl, toss the zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, salt, pepper, oregano, and garlic powder.
    • Spread the veggies on a baking sheet in a single layer.
    • Roast for 20-25 minutes, flipping halfway through, until they’re tender and lightly browned.
  2. Cook the Ground Turkey:

    • While the veggies are roasting, heat the olive oil in a large skillet over medium-high heat.
    • Add the chopped onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
    • Add the ground turkey to the skillet, breaking it apart with a spoon as it cooks. Cook until browned, about 5-7 minutes.
    • Stir in the cumin, paprika, salt, pepper, and soy sauce (if using). Cook for an additional 2-3 minutes to allow the flavors to combine.
  3. Assemble the Bowls:

    • Begin by layering the cooked rice at the bottom of each bowl.
    • Top with the cooked ground turkey and roasted veggies.
    • Garnish with fresh cilantro or parsley, a squeeze of lime, and any optional toppings like crumbled feta or avocado.
  4. Serve & Enjoy:

    • Serve immediately, or store in the fridge for up to 4 days for meal prep.

This bowl is highly customizable, so feel free to add your favorite veggies or switch up the seasonings to suit your taste!
