Ingredients:

For the Crust:

  • 1 ½ cups crushed shortbread cookies
  • 6 tablespoons melted butter

For the Cheesecake Layer:

  • 16 oz cream cheese, softened

  • 1 teaspoon vanilla extract
  • 1 cup whipped cream

For the Caramel Layer:

  • 1 cup caramel sauce (store-bought or homemade)

For the Coconut Layer:

  • 1 ½ cups sweetened shredded coconut, toasted

For Topping:

  • 1 cup chocolate chips, melted
  • Additional caramel sauce, for drizzling
  • Additional whipped cream, for garnish

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Prepare the Crust:
    • In a bowl, mix crushed shortbread cookies with melted butter until well combined.
    • Press the mixture evenly into the bottom of a 9×13-inch baking dish.
    • Bake the crust for 8-10 minutes until lightly golden. Let it cool completely.
  3. Prepare the Cheesecake Layer:
    • In a large bowl, beat cream cheese until smooth.
    • Add powdered sugar and vanilla extract, and beat until well combined.
    • Fold in whipped cream until smooth.
    • Spread the cheesecake mixture evenly over the cooled crust.
  4. Prepare the Caramel Layer:
    • Pour caramel sauce over the cheesecake layer, spreading it evenly.
  5. Prepare the Coconut Layer:
    • Sprinkle toasted coconut over the caramel layer.
  6. Finish Assembly:
    • Drizzle melted chocolate over the coconut layer.
    • Drizzle additional caramel sauce over the chocolate layer.
    • Garnish with dollops of whipped cream.
  7. Chill:
    • Refrigerate the dessert lasagna for at least 2 hours or until set.
  8. Serve:
