Rustic Beef Stroganoff with Egg Noodles

Here’s a recipe for Rustic Beef Stroganoff with Egg Noodles:

Ingredients:

  • 1 lb beef sirloin or tenderloin (cut into thin strips)
  • 2 tbsp olive oil
  • 1 large onion (finely chopped)
  • 2 cloves garlic (minced)
  • 8 oz mushrooms (sliced)
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tbsp flour
  • 1 tbsp Dijon mustard
  • Salt and pepper (to taste)
  • 1/4 cup fresh parsley (chopped, for garnish)
  • 12 oz egg noodles

Instructions:

  1. Cook the Egg Noodles:
    • In a large pot, bring salted water to a boil.
    • Add the egg noodles and cook according to the package instructions.
    • Drain and set aside.
  2. Prepare the Beef:
    • Season the beef strips with salt and pepper.
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the beef strips and cook until browned on all sides. Remove from the skillet and set aside.
  3. Cook the Vegetables:
    • In the same skillet, add the chopped onion and cook until softened.
    • Add the minced garlic and sliced mushrooms. Cook until the mushrooms are browned and any liquid has evaporated.
  4. Make the Sauce:
    • Sprinkle the flour over the vegetables in the skillet and stir well to combine.
    • Gradually add the beef broth, stirring constantly to avoid lumps.
    • Bring the mixture to a simmer and cook for a few minutes until it thickens slightly.
  5. Combine Everything:
    • Return the browned beef strips to the skillet.
    • Stir in the sour cream and Dijon mustard until the sauce is smooth.
    • Simmer gently for a few minutes until the beef is heated through and the sauce is well combined. Do not let it boil, as the sour cream may curdle.
  6. Serve:
    • Serve the beef stroganoff over the cooked egg noodles.
    • Garnish with chopped fresh parsley.
