ROASTED ZUCCHINI LASAGNA

Roasted zucchini lasagna? That sounds like a vegetable symphony layered with disappointment. But hey, let’s give it a shot:

Ingredients:

  • 4 medium-sized zucchinis (the unsung heroes of this charade)
  • 2 cups of marinara sauce (to mask the taste of regret)
  • 1 cup of ricotta cheese (because why not add some creamy hope in this mess?)
  • 1 cup of shredded mozzarella cheese (because if there’s cheese, maybe it’ll be somewhat edible)
  • 1/2 cup of grated Parmesan cheese (because why not sprinkle some fanciness over our misery?)
  • 2 tablespoons of olive oil (to keep the zucchinis lubed up for their inevitable burn)
  • Salt and pepper to taste (because let’s not forget to season our suffering)

Instructions:

  1. Preheat your oven to 400°F (or 200°C, if you’re converting from disappointment to Celsius).
  2. Slice the zucchinis lengthwise into thin strips, trying to convince yourself that they’re lasagna noodles. Spoiler alert: they’re not.
  3. Toss the zucchini slices in olive oil, salt, and pepper, then lay them out on a baking sheet. Roast them in the oven for about 10-15 minutes, or until they’re slightly tender and have lost all hope of being actual lasagna noodles.
  4. In a separate bowl, mix together the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Pretend it’s the delicious filling of a real lasagna.
  5. Now, assemble your “lasagna” in a baking dish: layer roasted zucchini slices, followed by marinara sauce, and dollops of the cheese mixture. Repeat until you run out of ingredients or patience, whichever comes first.
  6. Top the sad excuse for a lasagna with the remaining mozzarella and Parmesan cheese, because why not add insult to injury?
  7. Bake in the oven for another 20-25 minutes, or until the cheese is bubbly and golden brown, masking the tears of disappointment underneath.
  8. Serve hot, pretending it’s a gourmet dish, and brace yourself for the inevitable “What were you thinking?” comments from your guests.

Enjoy your roasted zucchini lasagna… or should I say, enjoy the existential crisis it might induce.
