Roasted Veggie Delight

Here’s a recipe for Roasted Veggie Delight:

Ingredients:

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Prepare Vegetables: Place all the chopped vegetables (red bell pepper, yellow bell pepper, zucchini, yellow squash, red onion, and cherry tomatoes) in a large bowl.
  3. Season Vegetables: Add minced garlic, olive oil, dried oregano, dried basil, salt, and pepper to the vegetables. Toss everything together until the vegetables are well-coated with the oil and seasonings.
  4. Arrange on Baking Sheet: Spread the seasoned vegetables in a single layer on a large baking sheet.
  5. Roast Vegetables: Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring once halfway through.
  6. Optional Topping: If using, sprinkle grated Parmesan cheese over the roasted vegetables and return to the oven for an additional 5 minutes, or until the cheese is melted and golden.
  7. Serve: Remove from the oven and transfer the roasted vegetables to a serving dish. Garnish with fresh basil or parsley if desired.

Tips:

  • Feel free to add or substitute other vegetables like carrots, broccoli, or asparagus.
  • For extra flavor, you can add a splash of balsamic vinegar or lemon juice before serving.
  • Serve the roasted veggies as a side dish, over quinoa or rice, or mixed into a salad.
