Ingredients:

  • Garlic powder (optional)
  • Dried herbs (such as thyme, rosemary, or oregano)
  • Balsamic vinegar (optional, for added flavor)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare the Vegetables:
    • Wash and peel (if necessary) the vegetables. Cut them into bite-sized pieces for even cooking.
  3. Seasoning:
    • Place the vegetables in a large bowl.
    • Drizzle olive oil over the vegetables, ensuring they are all lightly coated.
    • Season with salt, pepper, and any additional herbs or spices you prefer. Toss the vegetables to evenly distribute the seasoning.
  4. Roasting:
    • Spread the seasoned vegetables in a single layer on a baking sheet. You can line the sheet with parchment paper or lightly grease it to prevent sticking.
    • Roast in the preheated oven for 20-30 minutes or until the vegetables are tender and slightly caramelized. You may want to toss them halfway through the cooking time for even roasting.
  5. Optional Additions:
    • If you like, you can add minced garlic to the vegetables for the last 5-10 minutes of roasting for a fragrant flavor.
    • Drizzle balsamic vinegar over the roasted vegetables for a tangy kick just before serving.
  6. Serve:
