Roasted Potato Slices

Here’s a simple recipe for Roasted Potato Slices that’s crispy on the outside and tender on the inside:

Ingredients:

  • 4 large russet or Yukon Gold potatoes, washed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional for color and flavor)
  • 1 teaspoon dried rosemary (or any herb of your choice, like thyme)
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese or fresh herbs for garnish

Instructions:

  1. Preheat the oven: Set your oven to 400°F (200°C).
  2. Slice the potatoes: Cut the potatoes into ¼-inch thick rounds. Try to make the slices uniform for even cooking.
  3. Season the potatoes:
    • In a large bowl, toss the potato slices with olive oil until evenly coated.
    • Sprinkle in the garlic powder, paprika, rosemary, salt, and pepper. Toss again until the potatoes are well coated with the seasoning.
  4. Arrange on a baking sheet:
    • Spread the potato slices out in a single layer on a parchment-lined or lightly greased baking sheet. Make sure they don’t overlap.
  5. Roast the potatoes:
    • Roast in the preheated oven for about 20-25 minutes, flipping the slices halfway through. They should be golden brown and crispy on the edges.
  6. Optional toppings:
    • In the last 5 minutes of cooking, you can sprinkle grated Parmesan cheese over the slices for a cheesy finish.
    • Garnish with fresh herbs like parsley or chives before serving.
  7. Serve: Serve hot as a side dish with your favorite main course, or enjoy as a snack!
