Ingredients:

  • 200g (about 7 oz) digestive biscuits or graham crackers
  • 1 cup milk (240ml)
  • 1/2 cup sugar (100g)
  • 1/4 cup unsweetened cocoa powder (25g)
  • 1/4 cup unsalted butter (55g)
  • 1 teaspoon vanilla extract
  • Chopped nuts or chocolate chips (optional, for garnish)

Instructions:

  1. Prepare the Biscuits:
    • Break the digestive biscuits or graham crackers into small pieces. You can do this by placing them in a zip-lock bag and crushing them with a rolling pin or by pulsing them in a food processor. You want a mix of crumbs and small chunks.
  2. Make the Chocolate Sauce:
    • In a saucepan, combine the milk, sugar, cocoa powder, and butter.
    • Heat the mixture over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
    • Bring the mixture to a gentle boil and let it simmer for about 2 minutes, stirring occasionally. Remove from heat and stir in the vanilla extract.
  3. Assemble the Cake:
    • In a mixing bowl, combine the crushed biscuits with the chocolate sauce. Mix until the biscuits are well coated.
  4. Set the Cake:
    • Line a round cake tin or a baking dish with parchment paper.
    • Pour the biscuit mixture into the prepared tin and spread it out evenly.
  5. Chill:
    • Place the cake in the refrigerator to set for at least 2-3 hours, or until firm.
  6. Serve:
    • Once set, remove the cake from the tin and transfer it to a serving plate.
