Refreshing Lemon Ice Cream

Here’s a simple recipe for refreshing lemon ice cream that you can make at home:

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 1 cup fresh lemon juice (about 4-5 lemons)
  • 2 tablespoons lemon zest (from about 2 lemons)
  • 2 cups heavy cream
  • 1 cup whole milk
  • A pinch of salt

Instructions:

  1. Make the Lemon Syrup:
    • In a medium saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally until the sugar has completely dissolved. Remove from heat and let it cool to room temperature.
  2. Prepare the Lemon Mixture:
    • Once the syrup has cooled, add the fresh lemon juice and lemon zest. Stir well to combine.
  3. Mix with Cream and Milk:
    • In a large bowl, combine the heavy cream, whole milk, and a pinch of salt. Add the lemon syrup mixture and stir until well combined.
  4. Chill the Mixture:
    • Cover the mixture and refrigerate for at least 4 hours, or overnight. This allows the flavors to meld and the mixture to get thoroughly chilled.
  5. Churn the Ice Cream:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches the consistency of soft serve ice cream.
  6. Freeze the Ice Cream:
    • Transfer the churned ice cream to a lidded container and freeze for at least 2 hours, or until firm.
  7. Serve:
    • Scoop the lemon ice cream into bowls or cones, and enjoy!

Tips:

  • For an extra tangy flavor, you can increase the amount of lemon zest.
  • If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and freeze it, stirring every 30 minutes until it reaches the desired consistency.
