Raspberry sweet rolls

Here’s a delicious recipe for raspberry sweet rolls that will fill your kitchen with the most amazing aroma:

Raspberry Sweet Rolls Recipe

For the dough:

  • 1 cup warm milk (110°F)
  • 2 ¼ teaspoons active dry yeast
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour (plus more for dusting)
  • 1/2 teaspoon salt

For the raspberry filling:

  • 2 cups fresh or frozen raspberries (thawed if frozen)
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract

For the glaze:

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions:

1. Prepare the Dough:

  • In a small bowl, combine the warm milk, sugar, and yeast. Stir and let it sit for about 5 minutes until frothy.
  • In a large bowl, combine the melted butter, eggs, and vanilla extract. Add the yeast mixture, then gradually add the flour and salt. Mix until a soft dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1-1.5 hours or until doubled in size.

2. Make the Raspberry Filling:

  • In a saucepan, combine the raspberries, sugar, cornstarch, lemon juice, and vanilla extract.
  • Cook over medium heat, stirring occasionally, until the mixture thickens and the raspberries break down (about 5-7 minutes). Set aside to cool.

3. Assemble the Rolls:

  • Preheat your oven to 350°F (175°C).
  • Punch down the risen dough and roll it out on a floured surface into a large rectangle (about 12×18 inches).
  • Spread the raspberry filling evenly over the dough, leaving a small border around the edges.
  • Roll the dough up tightly from one long side and pinch the seams to seal.
  • Cut the rolled dough into about 12 even slices and arrange them in a greased 9×13-inch baking dish.
  • Cover the rolls with a cloth and let them rise for about 30 minutes while the oven preheats.

4. Bake the Rolls:

  • Bake the rolls in the preheated oven for about 20-25 minutes, or until golden brown.

5. Prepare the Glaze:

  • While the rolls are baking, whisk together the powdered sugar, milk, and vanilla extract until smooth.

6. Finish the Rolls:

  • Once the rolls are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the glaze over the warm rolls before serving.
