Quick Sourdough Cheesy Breadsticks with Discard

Here’s a quick and delicious Sourdough Cheesy Breadsticks recipe using your sourdough discard — no long fermentation needed!


🧀 Quick Sourdough Cheesy Breadsticks (with Discard)

Ready in: ~30 minutes
Yields: 8–10 breadsticks
Great for: Snack, soup side, or party platter


Ingredients:

  • 1 cup sourdough discard (unfed, from fridge is fine)

  • 3/4 cup all-purpose flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp garlic powder (optional)

  • 2 tbsp olive oil (plus extra for brushing)

  • 1/2 cup shredded cheese (cheddar, mozzarella, or blend)

  • 1 tbsp grated parmesan (optional)

  • Italian seasoning or chili flakes (optional topping)


Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.

  2. In a mixing bowl, combine:

    • 1 cup sourdough discard

    • 3/4 cup flour

    • 1 tsp baking powder

    • 1/4 tsp salt

    • 1/2 tsp garlic powder (if using)

    • 2 tbsp olive oil

    Mix until a soft dough forms. Add a bit more flour if too sticky.

  3. Roll out the dough on a floured surface or directly on the parchment into a rough rectangle, about 1/4 inch thick.

  4. Sprinkle cheese evenly over the top. Add parmesan or herbs if using.

  5. Press lightly on the cheese to help it stick. Then use a pizza cutter to score into strips (don’t separate them yet).

  6. Bake for 12–15 minutes, until golden and bubbly.

  7. Let cool slightly, then cut through and separate breadsticks. Serve warm!


🍽️ Tips & Variations:

  • Add chopped jalapeños or olives into the dough for extra flavor.

  • Use sharp cheddar for more punch or go mild with mozzarella.

  • These freeze well — reheat in oven or toaster oven.
