Pot of Pinto Beans

Sure! Here’s a basic but flavorful recipe for a Pot of Pinto Beans, perfect as a side dish, for tacos, or just on their own. You can make them on the stove, in a slow cooker, or in a pressure cooker.


🌱 Basic Pot of Pinto Beans (Stovetop Method)

🫘 Ingredients:

  • 1 lb (about 2 cups) dried pinto beans

  • 6 cups water (plus more for soaking)

  • 1 medium onion, chopped

  • 3–4 garlic cloves, minced or smashed

  • 1–2 bay leaves

  • 1 tsp salt (add after beans are tender)

  • ½ tsp black pepper

  • Optional: 1 tsp cumin, smoked paprika, or chili powder

  • Optional: 1 ham hock, bacon, or smoked turkey (for a meaty version)


🥣 Instructions:

  1. Soak the Beans (Optional but Recommended):

    • Rinse beans under cold water, removing any debris.

    • Cover with several inches of water and soak for 6–8 hours or overnight.

    • Drain and rinse before cooking.

  2. Cook the Beans:

    • Add beans to a large pot with 6 cups of fresh water.

    • Add onion, garlic, bay leaves, and any optional seasonings or meat.

    • Bring to a boil over medium-high heat.

    • Reduce to a simmer, cover partially, and cook for 1.5–2.5 hours, stirring occasionally, until beans are tender. Add more water if needed to keep beans covered.

  3. Season:

    • Once beans are tender, add salt and pepper to taste.

    • Simmer uncovered for another 15–20 minutes to thicken the broth, if desired.
