PORK CHOPS WITH SCALLOPED POTATOES

Pork chops with scalloped potatoes is a classic and delicious dish that combines tender pork chops with creamy and cheesy scalloped potatoes. Here’s a simple recipe for you to try:

Ingredients:

For the Pork Chops:

  • 4 bone-in pork chops
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or cooking oil

For the Scalloped Potatoes:

  • 4-5 medium potatoes, peeled and thinly sliced
  • 1 small onion, thinly sliced (optional)
  • 1 1/2 cups heavy cream or milk
  • 1 cup grated cheddar cheese (or cheese of your choice)
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork chops with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the pork chops and cook for about 3-4 minutes on each side until nicely browned. Remove the pork chops from the skillet and set them aside.
  4. In the same skillet, add the butter and let it melt. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Stir in the flour and cook for an additional 1-2 minutes to create a roux.
  6. Slowly pour in the heavy cream or milk while stirring constantly to prevent lumps from forming. Continue to cook and stir until the mixture thickens.
  7. Add the grated cheese to the creamy mixture and stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
  8. Layer half of the sliced potatoes and optional onion slices in the skillet, arranging them evenly.
  9. Pour half of the cheese sauce over the potatoes.
  10. Add the remaining potato slices and pour the remaining cheese sauce over them.
  11. Place the browned pork chops on top of the potatoes and sauce.
  12. Cover the skillet with aluminum foil or a lid and bake in the preheated oven for about 40-50 minutes, or until the potatoes are tender and the pork chops are fully cooked (internal temperature of pork should be 145°F or 63°C).
  13. If desired, remove the foil during the last 10 minutes of baking to allow the top to become golden and slightly crispy.
  14. Once done, remove from the oven and let it rest for a few minutes before serving.
  15. Garnish with chopped parsley if desired, and serve the pork chops and scalloped potatoes together for a comforting and hearty meal.
