Pork chops and potatoes make for a delicious and hearty meal. Here’s a simple recipe for you:

Ingredients:

For the Pork Chops:

  • 4 pork chops
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)
  • 2 tablespoons olive oil or vegetable oil

For the Potatoes:

  • 4 large potatoes, peeled and sliced into rounds or wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme (or your preferred herbs)
  • Salt and pepper to taste

Instructions:

For the Pork Chops:

  1. Start by seasoning the pork chops with salt, pepper, and paprika (if using). You can let them sit for a few minutes to absorb the flavors.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Once the oil is hot, add the pork chops to the skillet. Cook them for about 4-5 minutes on each side, or until they are nicely browned and cooked through. The internal temperature should reach 145°F (63°C) for safe consumption.
  4. Remove the pork chops from the skillet and let them rest for a few minutes before serving.

For the Potatoes:

  1. While the pork chops are cooking, you can prepare the potatoes. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the potato rounds or wedges with olive oil, dried thyme, salt, and pepper until they are evenly coated.
  3. Arrange the seasoned potatoes in a single layer on a baking sheet.
  4. Roast the potatoes in the preheated oven for about 25-30 minutes or until they are golden brown and tender. Make sure to flip them halfway through the cooking time for even browning.

Serving:

Serve the pork chops alongside the roasted potatoes for a satisfying meal. You can also add some steamed vegetables or a salad for a well-rounded dinner. Enjoy!
