Pistachio Cream Cake

A Pistachio Cream Cake sounds like a delicious and decadent dessert! Here’s a simple recipe for making this cake:

Ingredients:

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon pistachio extract (optional, for extra pistachio flavor)
  • ½ cup ground pistachios (finely chopped)

For the Pistachio Cream Filling:

  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup pistachio paste or finely ground pistachios
  • 2 tablespoons mascarpone or cream cheese (for extra richness)

For Garnishing:

  • Crushed pistachios
  • Whipped cream (optional)

Instructions:

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the softened butter, eggs, milk, and vanilla extract until smooth.
  • Gradually add the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in the ground pistachios and pistachio extract (if using).
  • Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

2. Make the Pistachio Cream Filling:

  • In a chilled mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form.
  • Fold in the pistachio paste or ground pistachios, mascarpone or cream cheese, and vanilla extract until well combined.
  • Chill the cream filling in the refrigerator for about 30 minutes to firm up.

3. Assemble the Cake:

  • Once the cakes have cooled, place one layer on a serving plate.
  • Spread a generous layer of pistachio cream on top.
  • Place the second cake layer on top and gently press down.
  • Frost the entire cake with the remaining pistachio cream.

4. Garnish and Serve:

  • Garnish the top with crushed pistachios and, if desired, whipped cream.
  • Chill the cake for about 30 minutes to allow the flavors to meld together.
  • Slice and serve!
