Pineapple Quick Bread

Pineapple quick bread is a delightful treat that combines the tropical flavor of pineapple with the ease and convenience of a quick bread recipe. Here’s a simple recipe for you to try:

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained (canned pineapple works well)
  • 1/2 cup chopped nuts (optional)
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well to ensure all ingredients are evenly distributed.
  3. In a separate bowl, beat the melted butter, eggs, and vanilla extract together until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the crushed pineapple and chopped nuts (if using), until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and spread it out evenly.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  9. If desired, dust the cooled bread with powdered sugar before slicing and serving.
