Pineapple Ice Cream

Here’s a delicious recipe for homemade Pineapple Ice Cream. This creamy, tropical dessert is perfect for a refreshing treat on a hot day.

Ingredients:

  • 2 cups fresh pineapple, diced (or canned pineapple, drained)
  • 1 cup granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon lemon juice (optional, for added freshness)

Instructions:

  1. Prepare the Pineapple:
    • If using fresh pineapple, dice it into small pieces. If using canned pineapple, make sure it’s well-drained.
    • In a blender or food processor, puree the pineapple until smooth. For a chunkier texture, blend only half of the pineapple and chop the remaining pineapple into small pieces.
  2. Combine Ingredients:
    • In a medium saucepan over medium heat, combine the pineapple puree, sugar, and a pinch of salt. Stir constantly until the sugar is completely dissolved and the mixture is slightly thickened, about 5-7 minutes. Remove from heat and let it cool completely.
  3. Mix the Base:
    • In a large mixing bowl, combine the heavy cream, whole milk, vanilla extract, and lemon juice (if using). Stir in the cooled pineapple mixture.
  4. Chill the Mixture:
    • Cover the mixture and refrigerate for at least 2 hours, or overnight. The mixture needs to be very cold before churning.
  5. Churn the Ice Cream:
    • Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.
  6. Freeze:
    • Once the ice cream reaches a soft-serve consistency, transfer it to an airtight container. Cover the surface with plastic wrap to prevent ice crystals from forming. Freeze for at least 4 hours, or until firm.
  7. Serve:
    • Scoop the ice cream into bowls or cones and enjoy!

Tips:

  • For an extra burst of flavor, you can add 1 tablespoon of rum or coconut rum to the mixture before churning.
  • If you prefer a smoother ice cream, strain the pineapple puree through a fine-mesh sieve before combining it with the other ingredients.
  • Feel free to add mix-ins like shredded coconut or white chocolate chips during the last few minutes of churning for added texture and flavor.
