Here’s a simple and delicious recipe for a Pineapple Cream Cheese Dessert:

Ingredients:

  • Crust:
    • 1 ½ cups graham cracker crumbs
    • ¼ cup granulated sugar
    • ½ cup unsalted butter, melted
  • Filling:
    • 2 packages (8 oz each) cream cheese, softened
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 can (20 oz) crushed pineapple, well-drained
  • Topping:
    • 1 package (3.4 oz) instant vanilla pudding mix
    • 1 ½ cups cold milk
    • 1 container (8 oz) whipped topping (Cool Whip), thawed

Instructions:

1. Prepare the Crust:

  1. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter.
  2. Press the mixture firmly into the bottom of a 9×13-inch baking dish.
  3. Refrigerate the crust while preparing the filling.

2. Prepare the Filling:

  1. In a large bowl, beat the cream cheese until smooth.
  2. Gradually add powdered sugar and vanilla extract, and continue beating until well combined and fluffy.
  3. Stir in the drained crushed pineapple until evenly distributed.
  4. Spread the cream cheese mixture over the graham cracker crust.

3. Prepare the Topping:

  1. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk until thickened.
  2. Gently fold in the whipped topping until well combined.
  3. Spread the pudding mixture over the cream cheese layer.

4. Chill and Serve:

  1. Refrigerate the dessert for at least 4 hours, or overnight, to allow it to set properly.
  2. Before serving, you can optionally garnish with additional whipped topping, pineapple chunks, or a sprinkle of graham cracker crumbs.

Tips:

  • Ensure the cream cheese is fully softened before mixing to avoid lumps.
  • Thoroughly drain the crushed pineapple to prevent the dessert from becoming too watery.
  • For a firmer crust, you can bake the graham cracker crust at 350°F (175°C) for 8-10 minutes, then let it cool completely before adding the filling.
