Pepperoni Parmesan Popovers Recipe
Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 cup whole milk, at room temperature
- 2 large eggs, at room temperature
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced pepperoni
- 2 tablespoons unsalted butter, melted
Instructions:
- Preheat your oven to 425°F (220°C). Place a popover pan or muffin tin in the oven as it preheats.
- In a mixing bowl, whisk together the flour and salt.
- In another bowl, whisk together the milk and eggs until well combined.
- Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Do not overmix.
- Stir in the grated Parmesan cheese and diced pepperoni until evenly distributed throughout the batter.
- Carefully remove the preheated popover pan or muffin tin from the oven and brush each cup with melted butter.
- Quickly pour the batter into the buttered cups, filling each about 2/3 full.
- Place the popover pan or muffin tin back in the oven and bake for 20-25 minutes, or until the popovers are puffed and golden brown.
- Remove from the oven and serve immediately while still hot.
