Peanut Butter Cake

Here’s a simple and delicious Peanut Butter Cake recipe:

Ingredients:

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup milk

For the Frosting:

  • ½ cup creamy peanut butter
  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 3-4 tbsp milk (adjust for consistency)

Instructions:

For the Cake:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan or two 8-inch round cake pans.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter & Peanut Butter: In a large mixing bowl, beat together the peanut butter, butter, and sugar until light and fluffy.
  4. Add Eggs & Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Alternate Dry Ingredients & Milk: Gradually add the dry ingredients to the peanut butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined.
  6. Bake: Pour the batter into the prepared pan(s) and smooth the top. Bake for 30-35 minutes (for 8×8 pan) or 20-25 minutes (for 8-inch rounds) or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

For the Frosting:

  1. Beat Butter & Peanut Butter: In a mixing bowl, beat together the peanut butter and butter until creamy.
  2. Add Sugar & Vanilla: Gradually add the powdered sugar, followed by the vanilla extract, and beat until combined.
  3. Adjust Consistency: Add milk, 1 tablespoon at a time, until you reach your desired frosting consistency.
  4. Frost the Cake: Once the cake is completely cooled, frost the cake generously with the peanut butter frosting.

Optional:

  • Top the cake with crushed peanuts, chocolate chips, or drizzle with melted chocolate for extra indulgence!
