Parmesan Smashed Potatoes

Parmesan Smashed Potatoes is a delicious and easy-to-make side dish that combines the creamy texture of mashed potatoes with the crispy edges of roasted potatoes. Here’s a simple recipe to make Parmesan Smashed Potatoes:

Ingredients:

  • 1.5 lbs (about 680g) baby potatoes, washed and scrubbed
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Boil Potatoes: Place the baby potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.
  3. Prepare Baking Sheet: While the potatoes are cooking, line a baking sheet with parchment paper or lightly grease it with olive oil.
  4. Smash Potatoes: Once the potatoes are cooked, drain them and let them cool slightly. Place each potato on the prepared baking sheet and, using a potato masher or the bottom of a glass, gently press down on each potato until it is flattened but still holds together.
  5. Season Potatoes: Drizzle the smashed potatoes with olive oil and sprinkle with salt, pepper, minced garlic, and grated Parmesan cheese.
  6. Bake: Transfer the baking sheet to the preheated oven and bake for 20-25 minutes, or until the potatoes are crispy and golden brown around the edges.
  7. Serve: Remove the potatoes from the oven and sprinkle with chopped parsley, if desired, for a pop of color and freshness. Serve hot as a delicious side dish.
