Pan-Seared Cod in White Wine Tomato Basil Sauce Recipe
Ingredients:
- For the Cod:
- 4 cod fillets
- Salt and pepper, to taste
- 2 tablespoons olive oil
- For the Sauce:
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, diced)
- 1/2 cup dry white wine
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon butter
- Fresh lemon wedges, for serving
Instructions:
- Prepare the Cod:
- Season the cod fillets with salt and pepper on both sides.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the cod fillets. Cook for about 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the fillets from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add 2 tablespoons of olive oil.
- Add the minced garlic and chopped onion, sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Stir in the diced tomatoes (with their juice) and cook for another 5 minutes, allowing the tomatoes to break down slightly.
- Pour in the white wine and add the red pepper flakes if using. Let the mixture simmer for about 5-7 minutes, until the sauce reduces slightly.
- Season the sauce with salt and pepper to taste.
- Stir in the chopped fresh basil and the butter, allowing the butter to melt into the sauce.
- Combine and Serve:
- Return the seared cod fillets to the skillet, nestling them into the sauce.
- Spoon some of the sauce over the fish and let it simmer for another 2-3 minutes to heat through.
- Serve the cod with the white wine tomato basil sauce spooned over the top.
- Garnish with additional fresh basil leaves and lemon wedges.
