Pan-Seared Cod in White Wine Tomato Basil Sauce Recipe

Ingredients:

  • For the Cod:
    • 4 cod fillets
    • Salt and pepper, to taste
    • 2 tablespoons olive oil
  • For the Sauce:
    • 2 tablespoons olive oil
    • 4 cloves garlic, minced
    • 1 small onion, finely chopped
    • 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, diced)
    • 1/2 cup dry white wine
    • 1/4 teaspoon red pepper flakes (optional)
    • Salt and pepper, to taste
    • 1/4 cup fresh basil leaves, chopped
    • 1 tablespoon butter
    • Fresh lemon wedges, for serving

Instructions:

  1. Prepare the Cod:
    • Season the cod fillets with salt and pepper on both sides.
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Once the oil is hot, add the cod fillets. Cook for about 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the fillets from the skillet and set aside.
  2. Make the Sauce:
    • In the same skillet, add 2 tablespoons of olive oil.
    • Add the minced garlic and chopped onion, sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
    • Stir in the diced tomatoes (with their juice) and cook for another 5 minutes, allowing the tomatoes to break down slightly.
    • Pour in the white wine and add the red pepper flakes if using. Let the mixture simmer for about 5-7 minutes, until the sauce reduces slightly.
    • Season the sauce with salt and pepper to taste.
    • Stir in the chopped fresh basil and the butter, allowing the butter to melt into the sauce.
  3. Combine and Serve:
    • Return the seared cod fillets to the skillet, nestling them into the sauce.
    • Spoon some of the sauce over the fish and let it simmer for another 2-3 minutes to heat through.
    • Serve the cod with the white wine tomato basil sauce spooned over the top.
    • Garnish with additional fresh basil leaves and lemon wedges.

Serving Suggestions:

  • Serve the pan-seared cod with a side of steamed vegetables, over pasta, or with a crusty loaf of bread to soak up the delicious sauce.
  • A crisp green salad makes a great accompaniment to this dish.
