“Overnight Taco Pasta” sounds like a flavorful and convenient dish that’s perfect for a quick dinner or meal prep. Here’s a simple recipe you can try:

Ingredients:

  • 1 lb (450g) ground beef or turkey
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 2 cups uncooked pasta (like penne or rotini)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups beef or chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste
  • Toppings (optional): diced avocado, jalapeƱos, sliced olives, extra cheese, tortilla chips, or hot sauce.

Instructions:

  1. Cook the Ground Meat:
    • In a large skillet or pot, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
    • Add the taco seasoning and mix well to coat the meat.
  2. Combine Ingredients:
    • Add the uncooked pasta, diced tomatoes (with juice), corn, black beans, and broth to the skillet. Stir everything together.
  3. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  4. Add Cheese and Sour Cream:
    • Once the pasta is cooked, remove the skillet from heat. Stir in the shredded cheddar cheese until melted and creamy.
    • Fold in the sour cream until well combined.
  5. Chill Overnight:
    • Transfer the pasta to a large container, cover it, and let it chill in the refrigerator overnight. This allows the flavors to meld together and makes for an even tastier dish.
  6. Reheat and Serve:
    • When you’re ready to eat, reheat the pasta on the stovetop or in the microwave until warmed through. Add a splash of broth or water if it needs some moisture.
    • Garnish with chopped cilantro and any additional toppings you like before serving.

Tips:

  • For a vegetarian version, skip the meat and double the beans.
  • You can use whole wheat pasta or gluten-free pasta if you prefer.
  • Leftovers can be stored in the refrigerator for up to 3 days.
