Onion and Cheddar Mashed Potato Cakes

Onion and cheddar mashed potato cakes are a delicious side dish or appetizer that’s perfect for using up leftover mashed potatoes. Here’s a simple recipe to make them:

Ingredients:

  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • Salt and pepper to taste
  • 2-3 tablespoons vegetable oil

Instructions:

  1. In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, finely chopped onion, all-purpose flour, beaten egg, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. While the oil is heating, shape the potato mixture into small patties, about 1/2 inch thick.
  4. Once the oil is hot, carefully place the potato cakes in the skillet, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Once cooked, remove the potato cakes from the skillet and place them on a plate lined with paper towels to drain any excess oil.
  6. Serve the onion and cheddar mashed potato cakes hot, garnished with additional shredded cheddar cheese or chopped green onions if desired.

These potato cakes are crispy on the outside and creamy on the inside, with the delicious flavors of onion and cheddar cheese in every bite. They make a great side dish for any meal or a tasty appetizer for parties and gatherings. Enjoy!
