ONE POT MEXICAN RICE CASSEROLE

Certainly! Here’s a simple recipe for a one-pot Mexican rice casserole:

Ingredients:

  • 1 cup long-grain white rice
  • 1 pound ground beef or turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 cup salsa
  • 2 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional, for serving)

Instructions:

  1. In a large oven-safe skillet or casserole dish, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  2. Add diced onions, bell peppers, and minced garlic to the skillet. Cook until the vegetables are softened.
  3. Stir in the rice and cook for 2-3 minutes, allowing it to lightly toast.
  4. Add black beans, corn, diced tomatoes with green chilies, salsa, chicken broth, chili powder, cumin, paprika, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.
  6. Preheat your oven broiler.
  7. Sprinkle shredded cheese over the top of the casserole and place it under the broiler for 2-3 minutes or until the cheese is melted and bubbly.
  8. Garnish with chopped cilantro and serve hot. You can also add a dollop of sour cream on top if desired.
