Omelet biscuits are a delightful combination of fluffy omelet and flaky biscuits, creating a hearty and satisfying breakfast or brunch dish. Here’s a simple recipe to make omelet biscuits:

Ingredients:

  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter or cooking oil
  • 4 biscuits, split in half (you can use store-bought or homemade biscuits)

Optional Add-ins:

  • Diced bell peppers
  • Diced onions
  • Diced tomatoes
  • Cooked breakfast sausage or bacon
  • Shredded cheese
  • Fresh herbs like parsley or chives

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Biscuits: If you’re using store-bought biscuits, prepare them according to the package instructions. If you’re making homemade biscuits, have them ready to use.
  3. Prepare the Omelet Mixture: In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. If using any optional add-ins, stir them into the egg mixture at this point.
  4. Cook the Omelet: In a non-stick skillet over medium heat, melt the butter or heat the cooking oil. Pour the egg mixture into the skillet and let it cook undisturbed for a minute or two until the edges begin to set.
  5. Assemble the Omelet Biscuits: Once the edges of the omelet are set, carefully fold it in half or thirds, depending on the size of your biscuits. Then, cut the folded omelet into portions that will fit onto each biscuit half.
  6. Place on Biscuits: Lay each portion of the folded omelet onto the bottom half of each biscuit.
  7. Top with Biscuit Halves: Place the top halves of the biscuits over the omelet portion, creating sandwich-like structures.
  8. Bake: Transfer the assembled omelet biscuits onto a baking sheet lined with parchment paper or aluminum foil. Bake in the preheated oven for about 5-7 minutes, or until the biscuits are heated through and lightly golden.
  9. Serve: Once baked, remove the omelet biscuits from the oven and serve them warm. They can be enjoyed on their own or paired with additional breakfast sides like fresh fruit or hash browns.
