Old fashioned skillet corn

Sure! Here’s a simple recipe for old-fashioned skillet corn:

Ingredients:

  • 4 cups fresh or frozen corn kernels
  • 2 tablespoons butter
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper (optional)
  • Salt and pepper to taste
  • 1/4 cup heavy cream (optional)
  • Chopped fresh parsley or chives for garnish (optional)

Instructions:

  1. Heat a large skillet over medium heat. Add the butter and let it melt.
  2. Once the butter is melted, add the diced onion and red bell pepper (if using) to the skillet. Cook until the onion is translucent and the pepper is softened, about 3-4 minutes.
  3. Add the corn kernels to the skillet and stir to combine with the onions and peppers. Let the corn cook for about 5-7 minutes, stirring occasionally, until it is heated through and starts to caramelize slightly.
  4. Season the corn with salt and pepper to taste.
  5. If using heavy cream, pour it over the corn and stir to combine. Let the corn cook for an additional 2-3 minutes until the cream is heated through and slightly thickened.
  6. Remove the skillet from heat and transfer the corn to a serving dish.
  7. Garnish with chopped fresh parsley or chives if desired, and serve hot.
