🥧 Old-Fashioned Chocolate Pie with Golden Meringue
Ingredients
For the Pie Filling:
-
1 cup granulated sugar
-
1/4 cup unsweetened cocoa powder
-
1/4 cup all-purpose flour
-
1/4 tsp salt
-
2 cups whole milk
-
3 large egg yolks (reserve whites for meringue)
-
1 tsp vanilla extract
-
2 tbsp unsalted butter
-
1 pre-baked 9-inch pie crust (homemade or store-bought)
For the Meringue:
-
3 large egg whites
-
1/4 tsp cream of tartar
-
6 tbsp granulated sugar
-
1/2 tsp vanilla extract
Instructions
1. Prepare the Filling:
-
In a medium saucepan, whisk together sugar, cocoa powder, flour, and salt.
-
Gradually whisk in milk until smooth.
-
Cook over medium heat, stirring constantly, until mixture begins to bubble and thicken.
-
In a small bowl, beat the egg yolks. Slowly whisk in a spoonful of the hot chocolate mixture to temper, then add yolks into the saucepan, whisking quickly.
-
Cook for another 2–3 minutes, until thick and glossy.
-
Remove from heat and stir in vanilla and butter until melted and smooth.
-
Pour filling into the pre-baked pie crust.
2. Make the Meringue:
-
Preheat oven to 350°F (175°C).
-
In a clean bowl, beat egg whites and cream of tartar until foamy.
-
Gradually add sugar, 1 tablespoon at a time, beating until stiff glossy peaks form.
-
Beat in vanilla extract.
3. Top and Bake:
-
Spread meringue over the hot pie filling, sealing it to the edges of the crust to prevent shrinking.
-
Bake for 10–12 minutes, or until meringue is golden brown.
-
Cool at room temperature, then chill at least 2 hours before slicing.
