1/2 cup (120ml) sour cream

1 tsp vanilla extract
-
Vegetable oil (for frying)
For the glaze (optional):
-
1 1/2 cups powdered sugar
-
2–3 tbsp milk
-
1/2 tsp vanilla extract
Instructions:
-
Mix Dry Ingredients:
In a bowl, whisk together flour, baking powder, baking soda, salt, and nutmeg. -
Cream Butter & Sugar:
In a large bowl, beat butter and sugar until sandy. Add egg yolks and beat until light and thick. -
Combine Wet Ingredients:
Add sour cream and vanilla. Mix well. -
Form Dough:
Add dry ingredients to wet and mix until just combined. Dough will be sticky. -
Chill:
Wrap dough in plastic and chill for 1 hour (this makes it easier to handle). -
Roll & Cut:
Roll dough on a lightly floured surface to about 1/2-inch thick. Cut with a donut cutter or two round cutters (about 3” and 1”). -
Heat Oil:
Heat 2–3 inches of oil in a heavy pot to 325°F (165°C). -
Fry:
Fry a few donuts at a time, about 2–3 minutes per side, until golden brown. Don’t overcrowd. -
Drain:
Remove with a slotted spoon and drain on a wire rack over paper towels. -
Glaze (optional):
Whisk glaze ingredients until smooth. Dip warm donuts in glaze and let set.
