Nut Roll Cookies Walnut Filling

Here’s a classic Nut Roll Cookie recipe featuring a delicious walnut filling. These cookies are tender, buttery, and filled with sweet, spiced walnuts—perfect for holidays or special occasions.


🍪 Nut Roll Cookies with Walnut Filling

Ingredients

Dough:
  • 1 cup (2 sticks) unsalted butter, softened

  • 8 oz cream cheese, softened

  • 2 ½ cups all-purpose flour

  • ¼ tsp salt

Walnut Filling:
  • 2 cups finely ground walnuts

  • 1 cup granulated sugar

  • ½ cup milk

  • 1 tsp vanilla extract

  • 1 tsp cinnamon (optional)

For Rolling:
  • Powdered sugar (for dusting and rolling)


🧑‍🍳 Instructions

1. Make the Dough

  1. In a large bowl, cream together the butter and cream cheese until light and fluffy.

  2. Mix in flour and salt gradually until a soft dough forms.

  3. Divide dough into 3-4 balls, flatten slightly, wrap in plastic, and refrigerate for at least 1 hour (or overnight).

2. Prepare the Walnut Filling

  1. In a saucepan over medium heat, combine walnuts, sugar, and milk.

  2. Cook, stirring constantly, until thickened (about 5–7 minutes).

  3. Remove from heat and stir in vanilla and cinnamon if using.

  4. Let it cool to room temperature before using.

3. Assemble the Cookies

  1. Preheat oven to 350°F (175°C).

  2. On a surface dusted with powdered sugar, roll out one portion of dough into a thin rectangle (~1/8-inch thick).

  3. Spread a thin layer of the walnut filling over the dough.

  4. Roll up jelly-roll style, starting from the long edge. Slice into 1-inch pieces.

  5. Place rolls seam-side down on a parchment-lined baking sheet.

4. Bake

  • Bake for 15–18 minutes, or until lightly golden on the edges.

  • Let cool slightly, then dust with powdered sugar.
