NO-BAKE ECLAIR CAKE

No-bake eclair cake is a delicious and easy-to-make dessert that mimics the flavors of traditional eclairs without the need for baking. Here’s a simple recipe for you:

Ingredients:

  • 1 box of graham crackers
  • 2 (3.4 oz) packages of instant vanilla pudding mix
  • 3 cups cold milk
  • 1 (8 oz) container of whipped topping (like Cool Whip)
  • Chocolate frosting or ganache (store-bought or homemade)

Instructions:

  1. In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes until it thickens.
  2. Gently fold in the whipped topping until well combined. This will be your eclair filling.
  3. In a 9×13-inch baking dish, layer a single layer of graham crackers to cover the bottom.
  4. Pour half of the pudding mixture over the graham crackers and spread it evenly.
  5. Add another layer of graham crackers on top of the pudding mixture.
  6. Pour the remaining pudding mixture over the second layer of graham crackers and spread it evenly.
  7. Top with a final layer of graham crackers.
  8. Heat the chocolate frosting or ganache according to the package instructions or make your own if you prefer.
  9. Pour the melted chocolate over the top layer of graham crackers, spreading it evenly to cover the entire surface.
  10. Refrigerate the eclair cake for at least 4 hours, or preferably overnight, to allow the graham crackers to soften and the flavors to meld.
  11. Once chilled and set, slice and serve. Enjoy your delicious no-bake eclair cake!

Feel free to get creative with the recipe. You can add a layer of sliced bananas or strawberries between the graham crackers and pudding for extra flavor and texture.
