no-bake dessert tastes like a tropical

Here’s a no-bake tropical dessert idea that’s super easy and bursting with island flavor:


🥥 Tropical Coconut Pineapple Cream Bars 🍍

Tastes like: A beach vacation in dessert form — creamy, fruity, and refreshing!

🌴 Ingredients:

Crust:

  • 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)

  • ½ cup shredded coconut (toasted optional)

  • ⅓ cup melted butter

  • 2 tbsp honey or maple syrup (optional, for extra sweetness)

Filling:

  • 8 oz cream cheese, softened

  • 1 cup crushed pineapple (drained well)

  • ½ cup coconut cream or full-fat coconut milk

  • ¼ cup powdered sugar or honey (adjust to taste)

  • 1 tsp vanilla extract

  • Zest of 1 lime (optional, for a zing)

Topping (optional):

  • Whipped cream or whipped coconut cream

  • Toasted coconut flakes

  • Fresh mango, pineapple chunks, or passionfruit pulp


🍧 Instructions:

  1. Make the crust:

    • Mix graham crumbs, coconut, melted butter, and honey until it resembles wet sand.

    • Press firmly into a parchment-lined 8×8 pan. Chill in fridge or freezer while making filling.

  2. Prepare the filling:

    • Beat cream cheese until smooth.

    • Add coconut cream, pineapple, sweetener, vanilla, and lime zest. Mix until creamy and fluffy.

  3. Assemble:

    • Spread the filling evenly over the chilled crust.

    • Chill for at least 4 hours (or overnight) until firm.

  4. Top & serve:

    • Just before serving, top with whipped cream, toasted coconut, and tropical fruit.
