No-bake Cookie Dough Protein Bars

Certainly! Here’s a simple recipe for no-bake cookie dough protein bars:

Ingredients:

  1. 1 cup rolled oats
  2. 1 cup vanilla protein powder
  3. 1/2 cup almond butter (or any nut butter of your choice)
  4. 1/4 cup honey or maple syrup
  5. 1 teaspoon vanilla extract
  6. 1/4 cup mini chocolate chips
  7. A pinch of salt

Instructions:

  1. In a large mixing bowl, combine the rolled oats and vanilla protein powder.
  2. In a separate microwave-safe bowl, melt the almond butter until it’s smooth and pourable. This usually takes about 30 seconds in the microwave.
  3. Add the melted almond butter, honey (or maple syrup), and vanilla extract to the oats and protein powder mixture. Mix well until all the ingredients are combined.
  4. Fold in the mini chocolate chips and a pinch of salt.
  5. Line a square baking dish with parchment paper. Transfer the mixture into the dish, spreading it evenly and pressing it down firmly with a spatula.
  6. Place the dish in the refrigerator for at least 1-2 hours to allow the bars to set.
  7. Once the bars are set, remove them from the refrigerator and lift them out using the parchment paper.
  8. Cut the mixture into bars or squares.
