No Bake Chocolate Peanut Butter Cups

Here’s a simple No-Bake Chocolate Peanut Butter Cups recipe. It’s quick to make, and requires minimal ingredients!

Ingredients:

  • 1 cup creamy peanut butter (natural or regular)
  • 1/4 cup coconut oil (or butter)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract (optional)
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup crushed peanuts (optional for topping)
  • Pinch of sea salt (optional)

Instructions:

Step 1: Prepare the Peanut Butter Layer

  1. In a microwave-safe bowl, combine peanut butter, 2 tablespoons of coconut oil, and honey (or maple syrup).
  2. Microwave in 30-second increments, stirring after each one, until everything is melted and smooth (about 1 minute).
  3. Stir in the vanilla extract (if using).
  4. Pour this mixture into muffin cups or a silicone muffin pan, filling them halfway.
  5. Place the tray in the freezer for about 15 minutes to firm up.

Step 2: Prepare the Chocolate Layer

  1. In another microwave-safe bowl, combine chocolate chips and the remaining 2 tablespoons of coconut oil.
  2. Microwave in 30-second increments, stirring after each one, until smooth.
  3. Remove the muffin tray from the freezer and pour the melted chocolate over the firm peanut butter layer, filling the rest of the cups.

Step 3: Add Final Touches and Set

  1. If desired, sprinkle crushed peanuts and a pinch of sea salt on top of the chocolate layer.
  2. Return the tray to the freezer for another 30 minutes, or until fully set.

Step 4: Serve

  • Once firm, remove the cups from the freezer. You can store them in the fridge for up to 2 weeks or in the freezer for longer!
