Nando chicken served with wedges and spiced corn

Nando’s Chicken is a popular South African restaurant chain known for its flame-grilled peri-peri chicken. Here’s a simple recipe to make Nando’s-style chicken served with wedges and spiced corn:

Ingredients:

For the Chicken:

  • 4 bone-in chicken pieces (such as thighs or drumsticks)
  • Nando’s peri-peri sauce (medium or hot, depending on your preference)
  • Salt and pepper to taste

For the Wedges:

  • 4 large potatoes, washed and cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Paprika (optional)

For the Spiced Corn:

  • 4 ears of corn, husked and cleaned
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions:

1. Marinate the Chicken:

  1. Pat dry the chicken pieces with paper towels.
  2. Season the chicken generously with salt and pepper.
  3. Place the chicken in a bowl and coat it thoroughly with Nando’s peri-peri sauce. Let it marinate for at least 30 minutes or up to overnight in the refrigerator.

2. Prepare the Wedges:

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the potato wedges with olive oil, salt, pepper, and paprika (if using) until evenly coated.
  3. Arrange the wedges in a single layer on a baking sheet lined with parchment paper.
  4. Bake for 25-30 minutes, flipping halfway through, until the wedges are golden brown and crispy.

3. Cook the Chicken:

  1. Preheat the grill to medium-high heat.
  2. Place the marinated chicken pieces on the grill and cook for about 5-7 minutes per side, or until fully cooked and charred on the outside.
  3. Alternatively, you can bake the chicken in the oven at 400°F (200°C) for about 35-40 minutes or until cooked through, flipping once halfway through.

4. Prepare the Spiced Corn:

  1. In a small saucepan, melt the butter over medium heat.
  2. Stir in the paprika, cumin, salt, and pepper.
  3. Brush the spiced butter mixture onto the corn ears, ensuring they are evenly coated.
  4. Grill the corn on the barbecue or roast them in the oven at 400°F (200°C) for about 15-20 minutes, turning occasionally, until they are tender and slightly charred.
  5. Optionally, sprinkle freshly chopped cilantro on top for garnish.

5. Serve:

  1. Arrange the grilled chicken, wedges, and spiced corn on a platter.
  2. Serve hot and enjoy your Nando’s-inspired feast!
