Ingredients:

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (20 oz) crushed pineapple, drained
  • 1 can (11 oz) mandarin oranges, drained
  • 1 jar (10 oz) maraschino cherries, drained and halved
  • 1 cup chopped pecans or walnuts (optional)
  • 1 cup mini marshmallows
  • 1 tub (8 oz) whipped topping, thawed
  • 1 package (8 oz) cream cheese, softened
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Cream Base:
    • In a large mixing bowl, beat the softened cream cheese until smooth.
    • Gradually add the sweetened condensed milk, and lemon juice, and continue beating until well combined.
  2. Add Fruits and Mix:
    • Gently fold in the drained crushed pineapple, mandarin oranges, maraschino cherries, and chopped nuts (if using).
    • Add the mini marshmallows and whipped topping, and carefully mix everything until well incorporated.
  3. Transfer to a Pan:
    • Pour the mixture into a 9×13-inch dish or individual serving cups.
    • Smooth the top with a spatula.
  4. Freeze:
    • Cover the dish with plastic wrap or foil and freeze for at least 4 hours or until firm.
  5. Serve:
    • Before serving, let the salad sit at room temperature for about 10 minutes to soften slightly for easier slicing or scooping.
    • Garnish with additional cherries or nuts if desired.

Enjoy this nostalgic and creamy frozen fruit salad, perfect for hot summer days or as a sweet side dish at family gatherings!
