MOUNDS CAKE

Certainly! Here’s a recipe for a delicious Mounds cake, inspired by the flavors of the popular Mounds candy bar. This cake combines the flavors of chocolate and coconut for a delightful dessert.

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Coconut Filling:

  • 2 cups sweetened shredded coconut
  • 1 can (14 ounces) sweetened condensed milk

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, finely chopped
  • 1 tablespoon butter

Instructions:

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes.
    • Stir in the boiling water. The batter will be thin, but that’s okay.
    • Pour the batter evenly into the prepared pans.
    • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
    • Let the cakes cool in the pans for about 10 minutes, then remove them from the pans and place them on a wire rack to cool completely.
  2. Prepare the Coconut Filling:
    • In a mixing bowl, combine the sweetened shredded coconut and sweetened condensed milk. Mix well until the mixture is fully combined.
  3. Assemble the Cake:
    • Place one cooled cake layer on a serving plate. Spread the coconut filling evenly over the top of the layer.
    • Place the second cake layer on top of the coconut filling.
  4. Prepare the Chocolate Ganache:
    • In a saucepan, heat the heavy cream over medium heat until it begins to simmer.
    • Place the finely chopped chocolate in a heatproof bowl.
    • Pour the hot cream over the chocolate and let it sit for a minute to soften the chocolate.
    • Add the butter to the bowl.
    • Gently whisk the mixture until the chocolate is melted and the ganache is smooth.
  5. Finish the Cake:
    • Pour the chocolate ganache over the top of the assembled cake.
    • Use a spatula to spread the ganache evenly over the top and sides of the cake.
  6. Decorate:
    • If desired, you can sprinkle additional shredded coconut on top of the ganache for decoration.
  7. Chill and Serve:
    • Place the cake in the refrigerator for a couple of hours to allow the ganache to set.
    • Slice and serve the Mounds cake, enjoying the combination of chocolate and coconut flavors!
