Here’s a simple and delicious Monkey Butter recipe—it’s a tropical, sweet spread made from bananas, pineapple, and coconut. Perfect on toast, pancakes, or even as a topping for ice cream!


🍌 Monkey Butter Recipe

Ingredients:

  • 5 ripe bananas, sliced

  • 1 can (20 oz) crushed pineapple (with juice)

  • ¾ cup granulated sugar

  • ½ cup shredded sweetened coconut (optional for extra tropical flair)

  • 3 tablespoons lemon juice

  • ½ teaspoon ground cinnamon (optional)


Instructions:

  1. Combine ingredients: In a medium saucepan, add the sliced bananas, crushed pineapple (with juice), sugar, lemon juice, and coconut (if using).

  2. Cook: Stir everything together and cook over medium heat. Bring it to a gentle boil, stirring often to avoid sticking or burning.

  3. Simmer: Reduce heat to low and let it simmer for 15–20 minutes, stirring occasionally. The mixture should thicken up and become jam-like.

  4. Mash (optional): If you prefer a smoother texture, use a potato masher or immersion blender to break down the chunks.

  5. Cool and store: Let the monkey butter cool, then transfer it to sterilized jars. Store in the refrigerator for up to 4 weeks.
